RAWWWW CHOCOLATE!

The Simple Raw Chocolate Recipe is the foundation upon which or witch you may with limitless imagination unfurl your cacao creativity. Its simple and supple. Put on your lab coat and get to experimenting by adding different flavours and extra ingredients like dried fruit, nuts, flavoured essences, any way you like your chocolate you can make your own RAW healthy and utterly scrumptious version. The only thing you must be careful of is to not overheat the raw cacao butter and raw cacao powder.

The Recipe makes around 32 chocolates (if using 2 silicone moulds!

Ingredients:

100g Raw Cacao Butter

6 Tablespoons Raw Cacao Powder

2-3 Tablespoons Honey

1 Small pinch of rock salt (Optional – use good quality sea salt to lift the chocolate flavour)

Dried mullberries and raw cashews (for recipe pictured)
Ensure all utensils and the bowl are dry before the ingredients are added as water can cause the mix to separate.

Directions:

Place the raw cacao butter in a bowl over a pan of water on a low heat and melt gently (Bain Marie or Baño Maria in Spanish). Once melted add 6 tbsp raw cacao powder and mix well, i like using wooden utensils for the job, but metal whisks work just as well and maybe technically better! Ensure the heat is low and add the honey, mix it well as it tends to cluster in one spot. Taste the mix once melted and add more sweetener if you prefer a sweeter taste.

Once completely melted and blended remove from heat. Your mixture should be runny and easy to pour* and can be poured or spooned into ice cube trays, silicone moulds or even platic tubs to make fabulous raw chocolate bars. Place mulberries and cashews in each little mould first and then pour the chocolate mix! Let them form in the freezer for about 15-20 minutes!

Feel free to add some chilli powder for Chilli Chocolates or peppermint essence or vanilla extract, orange peel, coffee or orange liquors are all things that can be added.And any nuts you love are delcious too…

Once made keep your Chocolate’s in the fridge or freezer and eat to your hearts content.

*If your mix is not runy and easy to pour, this may be because too much raw cacao powder has been added, so try adding a little more raw cacao butter and keep mixing and tasting until you have the right blend
