October Spinach Soup…



This Colour GREEN is troo to reality….

2 large potatoes
2 cups of fresh spinach
1 fennel bulb
1 small onion
1 fresh greek garlic
Boil Potato and fennel, keep skin so you get all of the potatoes’ nutrients that are found on the skin!
Simmer garlic onion and spinach seperately with a little bit of water. till they get soft but retain their vibrant green colour!
When potatoes have boiled and fennel has softened…Peel potatoes… Add everything in the blender with some lemon zest salt… Serve with raw olive oil and freshly squeezed lemon!!!
